Albania is known for its rich rivers, lakes and seas with fresh fish. The most common fishes in the country are the trout and the Koran. The Albanian traditional cuisine is rich in fish recipes, very similar to neighboring countries’ Mediterranean recipes.
Today’s recipe: Koran pan with nuts
Ingredients:
– Koran fish (2kg)
– Olive oil (20ml)
– Three onions
– Salt / pepper
– A few bay leaves
– 2 glasses of white wine
– Walnuts (250 grams)
– 2 or 3 carrots
– 1 piece of garlic
The preparation process
We clean the fresh Koran fish with abundant water and let it drain or we cover it with kitchen tissues for a few minutes. Than we cut it into roll pieces and pour salt on it. We coat a ceramic baking pan with olive oil and put the cut Koran on it. We put the baking pan in the oven and adjust oven’s temperature to 200 degrees. While the fish is in the oven, we start preparing the rest of the recipe.
In a medium-sized frying pan, we pour some olive or sunflower oil and we cut the onions into cubic small pieces and fry them for a few minutes. We mince carrots and start frying them with the onions and after some minutes we add bay leaves and garlic, salt, pepper and oregano into the preparation. We continue to blend it and then we add a small glass of white wine. This mass must boil for no more than 10 minutes. If the fish in the oven has been fried enough, we pour a glass of white wine in it.
This is the moment when we melt the mess with the Koran fried fish by pouring the mess into the fish’s pan. It must boil for approximately 15-20 minutes and after we take it out from the oven, we add crushed walnuts and some lemon leaves into it.
